Fall Sweet Potato Bars Recipe!

Make Sweet Potato Bars for Thanksgiving for your family!

For the Crust
-1 pack of Graham Crackers
-1/4 Cup of Granulated White Sugar
-1 teaspoon salt
-10 Tablespoons of melted unsalted butter
For the Filling
-1 can of Sweet Potato Puree (or) 1 can of Sweet Potatoes
-3 teaspoons of granulated sugar
-3 large eggs
-1 teaspoon of vanilla extract
-2 teaspoons of ground cinnamon
-2 teaspoons of ground ginger
-1 and ¼ cup of heavy cream
For topping
-1 bag of mini marshmallows

Directions

  1. To make the crust:First preheat your oven to 350 degrees and get an 8×8 baking pan and cover the bottom with parchment paper. Crush or use a food processor to make your graham crackers into fine crumbles. Use a bowl or use your food processor to combine your sugar and the salt to your graham cracker crumble then add the melted butter; it should look like wet sand. Press into the pan and bake in the oven for 10 minutes until golden brown.
  2. to make the filling, if you have the sweet potato puree, get a bowl and add all your ingredients together. If you have canned sweet potatoes I used my smoothie maker to puree the sweet potatoes by dumping them in the smoothie make with the juice and pulsed it, then combine all the ingredients.
  3. Add the filling to your crust and bake until set (it should not jiggle if you shake it) 48 to 50 minutes. Let it cool for 10 minutes.
  4. Heat the broiler. Add your mini marshmallows to the top of the filling and place in the oven until they are golden brown (1-2 minutes). Keep an eye on them so they do not burn! Let the bars cool completely before slicing and serving.
