Sweet & salty oatmeal peanut butter cookies!

Makes 48 servings

Preparation time: 15 minutes to make the dough & 1 hour in the fridge or overnight

Total time to bake: 18 minutes (for each batch)

Cookie Dough Ingredients: 

  • 1 cup of room temperature unsalted butter
  • 1 cup of packed brown sugar
  • 3/4 cups of white granulated sugar
  • 1 cup of peanut butter
  • 2 eggs at room temperature
  • 1 1/2 cups of all purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup of quick-cooking oats

Directions:

  1. Turn your oven on bake at 325 degrees Fahrenheit (165 Celsius).
  2. Cream the butter, sugars, and peanut butter together until smooth.
  3. Beat in the eggs one at the time at low speed until combined.
  4. In a separate bowl sift or combine the flour, baking soda, and salt together.
  5. At a low speed, slowly combine your flour mixture into the wet ingredients.
  6. Mix in the quick oats until just combined.
  7. Cover the bowl of dough with plastic wrap and chill in the refrigerator for an hour or overnight.
  8. Drop by teaspoonfuls onto your ungreased cookie sheets.
  9. Cook each batch (about 12 cookies) for 18-20 minutes until golden brown.
  10. After the cookies are baked, place them on a cooling rack for about 10 minutes, or sooner, and ENJOY!

NOTES: If the cookies come out too salty decrease the salt amount by 1/3 or 1/2. The saltiness will matter on what peanut butter you use.
